Every loaf is baked to order and available through weekly preorders. Rather than filling shelves with bread that sits waiting to be sold, each bake begins with a reservation so every customer receives bread at its peak.

Our dough is naturally fermented for up to 24 hours, developing a rich flavor, open crumb, and better digestibility that simply can't be rushed.

We bake with carefully selected heritage and artisan flours—including ancient grains and regional varieties whenever possible—sourced from mills that value quality, flavor, and responsible farming practices. We believe exceptional bread begins long before the dough is mixed, with the soil, the farmer, and the grain itself.

Originating in the Bordeaux region of France during the nineteenth century, Rouge de Bordeaux is one of the world's most celebrated heritage bread wheats. Prized by artisan bakers for its remarkable baking performance, it develops notes of toasted hazelnut, warm spice, caramelized crust, and a rich wheaty aroma while producing a beautifully balanced artisan loaf.

Turkey Red was introduced to the American Great Plains by Mennonite immigrants who emigrated from present-day Ukraine in the 1870s. Today it continues to be celebrated for its robust flavor, remarkable history, and exceptional bread-making performance.
